Roasted Potato Hash

Ingredients

  • 1 lb of golden baby potatoes
  • 1/2 small onion
  • small green pepper
  • 1 package (8oz) of baby bella mushrooms
  • 2 1/2 tsp of dried thyme
  • 1/2 tsp of garlic powder
  • 2 tbsp of chopped parsley
  • salt & pepper to taste

Preparation

  1. Roast the potatoes with a tiny bit of oil, thyme, salt & pepper at 350 for about 40-45 minutes or until fork tender. Set them aside

  2. Sauté the onion, and bell pepper until the onions are translucent

  3. Add in the mushrooms, thyme and garlic powder and continue to sauté until the Mushrooms have cooked down

  4. Once the potatoes have cooled slightly, cut them in half or quarters and add them to the sautéed vegetables

  5. Check for seasoning, heat through and add in the chopped parsley
