Super Tender Southern Fried Chicken
Ingredients
For Marinade
- 2kg chicken drumsticks
- 4 tbsp double cream
- 4 tbsp Greek yoghurt
- 1 tsp garlic powder
- 1 tsp chilli powder
- 1 tsp parsley
- 1 tsp black pepper
- 1/2 tsp ground white pepper
- 1/2 tsp salt
For Southern Fried Mix
- 3 cups breadcrumbs
- 1 - 1.5 tbsp all-purpose seasoning (adjust to taste)
- 1 tbsp parsley
- 1/2 tbsp onion powder
- 1/2 tbsp garlic powder
- 1/2 tbsp black pepper
- 1 tsp ground white pepper
- 1 tsp cayenne pepper
For Coating
- plain flour
- 3 whisked eggs
Preparation
Marinate drumsticks using the ingredients listed above for at least 1 - 3 hours or overnight for maximum tenderness.
Combine ingredients for Southern Fried mix in a large bowl. Start by adding less all-purpose seasoning, only adding more if needed. Taste and adjust; the mix should be well-seasoned without extra salt.
Dredge marinated drumsticks in plain flour, dip in whisked egg, and coat with the Southern Fried mix. Place coated pieces on a wire rack for 10 mins to set the coating.
Deep fry drumsticks in batches over medium to medium-high heat for 15 mins, turning periodically. Alternatively, air fry at 180°C for 20 mins or until fully cooked, rotating halfway. Ensure chicken is no longer pink inside.
Transfer to a cooling rack to maintain crispy coating. Serve with preferred sides and enjoy Super Tender Southern Fried Chicken!
