Super Tender Southern Fried Chicken

Ingredients

For Marinade

  • 2kg chicken drumsticks
  • 4 tbsp double cream
  • 4 tbsp Greek yoghurt
  • 1 tsp garlic powder
  • 1 tsp chilli powder
  • 1 tsp parsley
  • 1 tsp black pepper
  • 1/2 tsp ground white pepper
  • 1/2 tsp salt

For Southern Fried Mix

  • 3 cups breadcrumbs
  • 1 - 1.5 tbsp all-purpose seasoning (adjust to taste)
  • 1 tbsp parsley
  • 1/2 tbsp onion powder
  • 1/2 tbsp garlic powder
  • 1/2 tbsp black pepper
  • 1 tsp ground white pepper
  • 1 tsp cayenne pepper

For Coating

  • plain flour
  • 3 whisked eggs

Preparation

  1. Marinate drumsticks using the ingredients listed above for at least 1 - 3 hours or overnight for maximum tenderness.

  2. Combine ingredients for Southern Fried mix in a large bowl. Start by adding less all-purpose seasoning, only adding more if needed. Taste and adjust; the mix should be well-seasoned without extra salt.

  3. Dredge marinated drumsticks in plain flour, dip in whisked egg, and coat with the Southern Fried mix. Place coated pieces on a wire rack for 10 mins to set the coating.

  4. Deep fry drumsticks in batches over medium to medium-high heat for 15 mins, turning periodically. Alternatively, air fry at 180°C for 20 mins or until fully cooked, rotating halfway. Ensure chicken is no longer pink inside.

  5. Transfer to a cooling rack to maintain crispy coating. Serve with preferred sides and enjoy Super Tender Southern Fried Chicken!
