Vegan Popcorn Falafel with Crispy Crust

Ingredients

Falafel

  • 2 cans chickpeas (drained)
  • 1 red onion (finely chopped)
  • Juice of 1 lemon
  • 3 cloves garlic
  • 2 tsp Harissa paste
  • 1 tsp Salt
  • 1 tsp Cumin
  • 1/2 tsp Pepper
  • 1/2 cup Flour
  • 1/4 cup Coriander
  • 1/4 cup Parsley

Batter

  • 1 cup Plain flour
  • 1/2 cup Almond milk

Crust

  • 1 cup Panko breadcrumbs
  • Vegetable oil (for frying)

Preparation

  1. Put all the falafel ingredients into a food processor and whizz them up into a thick paste.

  2. Take a spoonful of the mixture out of the food processor, roll it up into a ball in the palm and put on a plate. Repeat this process until all the falafel mixture has been used up.

  3. Put the batter ingredients in a mixing bowl and mix them up until you have a creamy, thick batter.

  4. Dip a falafel ball in the batter, roll it around in the panko bread crumbs making sure you have a good coverage.

  5. Deep fry the balls until the crust is golden brown and really crispy.
