Baked Pears with Maple Syrup and Coconut Yoghurt

Ingredients

  • 2 pears
  • Walnuts or pecans
  • 2 tsp. coconut oil
  • 1 tbsp. maple syrup
  • 1/2 tsp vanilla extract or bean paste
  • Cinnamon
  • Sea salt

Preparation

  1. Preheat oven to 160°C

  2. Line baking tray with paper and place the pear halves evenly

  3. Place nuts in the spooned out area

  4. Mix together coconut oil, maple syrup and vanilla and pour evenly over pears

  5. Dust over cinnamon and a small pinch of salt

  6. Bake for 30 minutes or until soft but golden

  7. Serve warm with coconut yoghurt

  8. Optionally add a traditional golden warm Anzac biscuit
