Baked Veggie and Chickpea Snacks

Ingredients

  • 1/3 cup finely chopped cabbage
  • 1/3 cup finely chopped carrot
  • 1/2 tsp grated ginger
  • 1 clove grated garlic
  • 1/4 tsp cumin powder
  • 1 tablespoon olive oil
  • 1 green onion chopped
  • 1/2 teaspoon salt, divided
  • 1 egg beaten
  • 1 tsp lemon zest
  • 2 tsp lemon juice
  • 1 tsp mustard powder
  • 2 Tbspn chickpea flour
  • 1 can rinsed and drained chickpeas

Yogurt dip

  • 1/3 cup plain yogurt
  • 1 garlic clove
  • 1 tsp chopped parsley or chives
  • salt and pepper
  • 1 tsp lemon juice

Preparation

  1. They may look like a doughnut, but it's not.

  2. Lightly beat the egg and add to all other ingredients. Mix well and spoon into oiled doughnut pan.

  3. Bake at 375 F for about 15 minutes.
