Blueberry Spirulina Chia Pudding with Compote

Ingredients

Chia pudding

  • 1 packet of Freeze Dried Spirulina
  • 1 tbsp maple syrup
  • 1 can coconut milk
  • 1 tsp vanilla
  • 4 tbsp chia seeds

Blueberry compote

  • 2 cups blueberries
  • 3 tbsp maple syrup
  • 1 tsp cinnamon
  • 2 tbsp shredded coconut

Preparation

  1. Whisk together the chia pudding ingredients, chill for four hours or overnight.

  2. In a small saucepan, combine all the blueberry compote ingredients. Simmer until the blueberries begin to break down and compote thickens, approx 15-20 minutes.

  3. Take a spoonful of the compote into your cup or jar of choosing, top with the chia pudding, and then top with remaining compote.
