Cacao Black Rice Pudding

Ingredients

  • 1/2 to 1 cup water
  • 2 tablespoons maple syrup
  • 2 tablespoons raw cacao powder
  • 1/2 teaspoon cinnamon
  • pinch of salt
  • 1 handful soaked almonds
  • 1 to 2 cups soaked and cooked black rice
  • 3 cups almond milk (for alternative method)
  • optional berries
  • cacao nibs for serving

Preparation

  1. Blend 1/2 to 1 cup water, 2 tablespoons maple syrup, 2 tablespoons raw cacao powder, 1/2 teaspoon cinnamon, pinch of salt, and 1 handful of soaked almonds.

  2. Warm the blended mixture in a saucepan with optional berries.

  3. Add 1 to 2 cups of soaked and cooked black rice and stir well.

  4. Alternatively, cook 1 cup black rice in 3 cups almond milk.

  5. If using the alternative method, add cinnamon, salt, raw cacao powder, and maple syrup at the end of cooking.

  6. Serve with cacao nibs and cacao sauce, which is made by mixing maple syrup, raw cacao powder, and almond milk.

  1. This recipe is a twist on traditional rice pudding and is FODMAP-friendly and vegan.

  2. Black rice is more gelatinous than white rice, higher in fiber, and commonly used in Japanese cuisine.
