Caramelized Apple Peanut Butter Toast with Chocolate Drizzle
Ingredients
- Thick sliced vegan multi grain bread, toasted
- Pure creamy peanut butter
- Granny Smith apple, cored and sliced
- Vegan butter
- Maple syrup
- Dark chocolate (e.g., "coffee cardamom coconut mylk" by Endorfin Foods)
- Goji berries
Preparation
Warm a pan over medium heat. Add vegan butter, once melted, add sliced apples. Sprinkle cinnamon and drizzle maple syrup. Stir well, allow to soften and caramelize.
While the apples are caramelizing, toast the bread.
While the above are cooking, melt chocolate and a bit of coconut oil to make it thin for drizzling.
Lather toast with a generous layer of pure peanut butter.
Top with caramelized apples.
Drizzle the melted chocolate over the top.
Finish with a few goji berries.
