Chai-Spiced Chickpea Cookies
Ingredients
- 1 can chickpeas, drained and rinsed
- 6 tbsp oat flour
- 1/4 cup almond butter
- 1 tsp vanilla
- 4 tbsp maple syrup
- Hefty amount of cinnamon
- Ground ginger
- A few sprinkles of nutmeg
- Pinch of salt
Preparation
In a food processor, pulse the oats into a flour.
Add in the drained and rinsed chickpeas, almond butter, vanilla, maple syrup, cinnamon, ground ginger, nutmeg, and salt.
Blend all the ingredients together until well combined.
Put the batter in the fridge to set for about 15 minutes.
Meanwhile, preheat the oven to 350°F (175°C) and line a baking tray with parchment paper.
Roll the dough into 1 tablespoon-sized balls, making approximately 12 cookies in total.
Place the dough balls on the prepared baking sheet and gently press them to flatten.
Bake the cookies in the preheated oven for 15-17 minutes.
Once baked, remove the cookies from the oven and allow them to cool.
