Chia Pudding
Ingredients
- chia pudding:
- 1 packet of freeze dried spirulina
- 1 tbsp maple syrup
- 1 can coconut milk
- 1 tsp vanilla
- 4 tbsp chia seeds
- blueberry compote:
- 2 cups blueberries
- 3 tbsp maple syrup
- 1 tsp cinnamon
- toppings
- 2 tbsp shredded coconut
Preparation
Whisk together the chia pudding ingredients, chill for four hours or overnight
In a small saucepan, combine all the blueberry compote ingredients
Simmer until the blueberries begin to break down and compote thickens, approx 15-20 minutes
Take a spoonful of the compote into your cup or jar of choosing, top with the chia pudding, and then top with remaining compote
