Chia Pudding

Ingredients

  • chia pudding: ⁠
  • 1 packet of freeze dried spirulina⁠
  • 1 tbsp maple syrup⁠
  • 1 can coconut milk⁠
  • 1 tsp vanilla⁠
  • 4 tbsp chia seeds⁠
  • blueberry compote:⁠
  • 2 cups blueberries⁠
  • 3 tbsp maple syrup⁠
  • 1 tsp cinnamon⁠
  • toppings⁠
  • 2 tbsp shredded coconut⁠

Preparation

  1. Whisk together the chia pudding ingredients, chill for four hours or overnight

  2. In a small saucepan, combine all the blueberry compote ingredients

  3. Simmer until the blueberries begin to break down and compote thickens, approx 15-20 minutes

  4. Take a spoonful of the compote into your cup or jar of choosing, top with the chia pudding, and then top with remaining compote
