Coconut Cinnamon Walnut Muffins

Ingredients

  • 1 cup almond flour
  • 1/3 cup oat flour
  • 1 tsp cinnamon
  • 1 tsp baking powder
  • 1 tsp acv
  • 1/3 oat milk
  • 1/4 cup melted vegan butter
  • 1/4 cup maple syrup
  • 2 tbsp peanut butter
  • 1/4 cup crushed walnuts
  • 1/4 cup large coconut flakes
  • extra cinnamon for topping

Preparation

  1. In large bowl mix the dry ingredients, then add wet

  2. Fold in walnuts and coconut

  3. Scoop batter into a lined muffin pan and dust with more cinnamon

  4. Makes 6 medium muffins
