Date Nut Cookies
Ingredients
- 2 cups pitted dates
- 1/4 cup water
- 1/2 cup nuts (i used a combo of unsalted cashews and almonds)
- 1/2 cup peanut butter
- 1/2 cup whole rolled oats
- 1/2 teaspoon salt
Preparation
Preheat oven to 350 degrees and line a baking sheet with parchment paper
Chop nuts in food processor until broken down in small pieces and set aside
In the food processor or a high powdered blender, add dates and water and blend until a paste has formed (I blended for about a minute, scraping down the sides of my food processor every 10/15 seconds or so)
Once date paste is done, add nuts, peanut butter salt
Blend until combined
Add oats and pulse for a few seconds until blended but not totally broken down, then add batter to a separate bowl (this makes it easier to work with)
Scoop out batter into balls and flatten with your hands on the baking sheet (these do not spread or rise so make them the thickness you want, I got 12 cookies out of this mixture)
If it’s super sticky add more oats
Bake for 15 minutes and let cool on the baking sheet for about 5 minutes before transferring to a wire rack to cool completely
Store in an airtight container
