Decadent Chocolate Peanut Butter Chickpea Brownies

Ingredients

  • 1 can chickpeas, drained and rinsed
  • 1/2 cup unsweetened smooth peanut butter (plus extra for topping)
  • 1/2 cup maple syrup
  • 1 tbsp olive oil
  • 1 tbsp vanilla extract
  • 1/3 cup ground almonds
  • 1/4 cup unsweetened cacao powder
  • 1/2 tsp baking powder
  • 1/2 tsp salt
  • 1 tbsp chocolate chips (use dairy-free for dairy-free version)

Preparation

  1. Preheat the oven to 180°C (350°F). Line a square brownie pan with non-stick paper, approximately 7 inches square.

  2. In a blender or food processor, combine chickpeas, peanut butter, maple syrup, olive oil, and vanilla extract. Blend until smooth, scraping down the sides as needed.

  3. Add ground almonds, cacao powder, baking powder, and salt to the blender. Blend until the mixture becomes smooth. It will be thick in texture.

  4. Pour the mixture into the lined baking tray and gently press it down. You can use a slightly wet spatula to help press the mixture evenly.

  5. Dot extra peanut butter on top of the mixture and gently press it into the chocolate layer.

  6. If desired, sprinkle the chocolate chips and nuts on top of the mixture for added texture and flavor.

  7. Bake the brownies for 25 minutes in the preheated oven.

  8. Allow the brownies to cool slightly, then cut them into squares.
