Decadent Snickers Cookie Cups
Ingredients
For the Cookie Cups
- 1 cup Almond Meal
- 3/4 cup Oat Flour
- 1/4 cup Protein Powder (@macr0mike)
- 1/4 cup Maple Syrup
- 1/4 cup Almond Milk
- 3 tbs Peanut Butter
- Cacao Nibs to taste
For the Caramel
- 1 cup Dates (soaked)
- 2 tbs Almond Milk
- 2 tbs Coconut Oil
- 1 tbs Peanut Butter
- Chopped Peanuts to taste
Topping
- 40g Dark Chocolate (melted)
Preparation
Preheat oven to 180°C.
Combine ingredients for cookie cups in a bowl, stirring until a thick dough forms.
Press the dough into silicone muffin molds, shaping them into cup forms. Bake for 20 minutes, then allow them to cool at room temperature and refrigerate to firm up.
Make caramel by blending soaked dates, almond milk, coconut oil, and peanut butter until smooth. Fold in chopped peanuts.
Fill the cooled cookie cups with the caramel mixture and top them with melted dark chocolate. Refrigerate to set.
