French Vegan Galette Des Rois

Ingredients

  • 2 sheets of vegan puff pastry
  • 2 cups of almond meal
  • 1/2 cup maple syrup
  • 2 tbsp of cornflour or arrowroot
  • 1/2 tsp of almond essence
  • 1/2 tbsp soy milk or almond milk

Preparation

  1. Preheat the oven to 180C/360F.

  2. Defrost the puff pastry and cut it into 2 circles using a tart tin.

  3. In a bowl, combine the almond meal, almond essence, corn flour, and maple syrup.

  4. Spread the mixture over one pastry circle, then top with the second pastry circle.

  5. Fold the edges over, brush with a little soy milk, and decorate with knife lines.

  6. Bake for 40-50 minutes or until golden. Let cool slightly and serve warm.

Notes

  1. Add a feve (fava bean or small figurine) before sealing the pastry for the traditional surprise.
