Gooey Vegan Black Bean Brownies

Ingredients

  • 1 can black beans (drained and rinsed)
  • 1/3 cup raw creamy almond butter (Trader Joe's)
  • 1/3 cup maple syrup
  • 1/2 cup almond flour
  • 1/2 cup rolled oats
  • 1/4 cup cocoa powder
  • 2 tablespoons ground flax seeds
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon baking soda
  • 1/4 teaspoon salt

Preparation

  1. Preheat the oven to 350 degrees Fahrenheit.

  2. Add the wet ingredients to a food processor and blend them.

  3. Add the remaining ingredients to create the brownie batter.

  4. Place the batter in an 8x8 baking dish lined with parchment paper, then add vegan mini chocolate chips and nut butter drizzle.

  5. Bake for 25 minutes.

  6. Allow the brownies to cool and solidify for a few hours before serving.
