Grain-Free Sweet Potato Waffles

Ingredients

  • 2 small sweet potatoes (steamed & mashed)
  • 2t ground flaxseed meal
  • 2/3c quinoa flour
  • 1tsp cinnamon
  • 1/4tsp nutmeg
  • 1tsp vanilla extract
  • 1/2tsp baking powder
  • 1t acv
  • 1 1/2c of almond milk

Preparation

  1. Cube and boil 2 small sweet potatoes until soft (mine took ~8min; the smaller you cube them the quicker they boil)

  2. Drain the water then mash the potatoes (i kept the skin on when boiling, then the skin came right off while mashing, so i picked it out)

  3. Leave you mash in the fridge (if you prepped it, or wait for it to cool down if you want to use it the same morning)

  4. Add all remaining ingredients to create your batter; slowly add in your liquid at the end for the perfect waffle batter consistency

  5. Cooked for 4min 390°f in my cuisinart waffle maker

  6. Topped with almond butter and enjoy
