Healthy Apple Muffins
Ingredients
- 2 cups wholemeal flour
- 1 tsp. Bicarb soda (not baking powder)
- 1 cup chopped dried fruit (cranberries used)
- Pinch of salt
- 1 tsp. Cinnamon
- 2 cups diced apple (peeled & chopped in .5cm pieces)
- 1/2 cup olive oil
- 1/3 cup maple syrup (adjust for desired sweetness)
- 2/3 cup creamy almond milk
- 1 egg
- 1 tsp. apple cider vinegar
- Cream cheese (dairy or cashew) & honey for serving
Preparation
Preheat oven to 200 degrees C and line or grease a cupcake tin.
Mix all dry ingredients, then add the dried fruit and chopped apple.
Add all the wet ingredients and mix well.
Pour the batter into muffin tin and bake in a preheated oven for 25-30 minutes or until golden and cooked through (insert skewer to check). Remove from the oven and cool in the tin for 5 minutes.
Serve warm with a smear of cream cheese and a drizzle of honey.
