Homemade Vegan Piña Colada Ice Cream

Ingredients

  • 400 g (about 2 cups) pineapple, peeled and chopped
  • * 2 cans chilled full fat coconut milk
  • * 1 tbsp lime juice
  • * 4-6 tbsp maple syrup or liquid sweetner of choise
  • * 1/4 tsp tumeric, for color, optional

Preparation

  1. Start by taking out your blender and the two well chilled cans of coconut milk

  2. Add one whole can of coconut milk to the blender and from the other can just scoop off the thick top part

  3. Add the pineapple, lime juice and start by adding just 4 tbsp of sweetener

  4. If using tumeric, add it now

  5. Blend until completely smooth and taste if it needs more sweetener

  6. If you have an icecream maker, follow the machiens instructions

  7. Or, pore the mixture in a freezer container

  8. Place in the freezer and stir well every 30 minutes until the concistency is like soft serve ice cream

  9. Then freeze until solid

  10. Let the ice cream sit in room temperature for about 10 minutes before serving, this makes schooping easier

  11. Enjoy!
