Lemon Poppy Seeds Cookies

Ingredients

  • 1 cup almond flour
  • 2 tbsp coconut flour
  • 1/3 cup date sugar or maple syrup or coconut sugar
  • 1/4 tsp salt
  • 1 large egg
  • zest of 2 lemon
  • 1 tbsp lemon juice
  • 1 tbsp poppyseeds

Preparation

  1. Preheat the oven to 350 & line a sheet tray with parchment paper

  2. Set aside

  3. In a large bowl combine almond flour, coconut flour, sugar, salt & baking soda, mix well

  4. Add in the coconut oil, egg, lemon zest & juice & poppyseeds, mix well until everything is combined

  5. Divide into 10 equal portions, about 1 heaping tablespoon each

  6. Roll into balls & place on the sheet tray

  7. Gently press them down to about 1/2 inch thick

  8. Bake for 10 minutes, remove from the oven & let cool

  9. Once cookies are cool, make the glaze

  10. For glaze: 1/4 cup coconut butter, 2 tbsp maple syrup, 2 tbsp lemon juice, 1 tsp vanilla, pinch of salt

  11. Make sure coconut butter is liquid, you may need to microwave it for 30 seconds & stir it well

  12. Combine the coconut butter, maple syrup, lemon juice, vanilla & salt in small bowl & stir well. Spoon on each cookie covering the top, then store in the fridge & enjoy
