Making These Vegan & Gluten Free Brownies

Ingredients

  • 1/2 cup gluten free flour ( Bob’s red mill)
  • 1/4 cup cacao powder
  • 1/2 tsp sea salt
  • 1/2 tsp baking soda
  • 3/4 cup coconut sugar
  • 2 tbsp ground flax (mix with 3tbsp water & let thicken)
  • 1/4 cup pumpkin purée
  • 1tsp Apple cider vinegar
  • 3 tbsp coconut butter (melted )
  • 1/2 cup xoco dark chocolate chunks
  • 1/2 cup walnuts

Preparation

  1. Preheat oven to 400 degrees f

  2. In a small bowl combine ground flax with 3 tbsp water, mix and set aside to thicken

  3. In large bowl combine all dry ingredients (gf flour, baking soda, salt, coconut sugar, cacao powder)

  4. Melt chocolate chunks with coconut oil and set aside

  5. In a bowl combine all wet ingredients (melted chocolate and coconut oil

  6. Apple cider vinegar, pumpkin purée and flax egg

  7. Mix everything together until well incorporated

  8. Pour your wet mixture into large bowl with dry mixture and combine until well incorporated

  9. Add walnuts and mix into batter

  10. Oil 8x8 baking dish or line with parchment paper

  11. Scoop brownie batter into baking dish and evenly spread into dish with a rubber spatula

  12. Pop baking dish into oven for 20 minutes

  13. Remove from oven and let cool before cutting into squares
