Mango and Vanilla Panna Cotta with Passion Fruit Coulis

Ingredients

  • 200g fresh mango
  • 2 tbsp agave or maple syrup
  • 1 tsp vanilla bean paste
  • 100g coconut cream
  • 200ml rice milk
  • 1 tbsp agave
  • 1/2 tsp agar powder
  • 2 passion fruits

Preparation

  1. In a saucepan, combine rice milk, coconut cream, agar powder, 1 tablespoon agave, and vanilla bean paste

  2. Heat the mixture over medium heat, stirring until the agar powder dissolves, then add fresh mango and blend until smooth

  3. Pour the mixture into molds or serving dishes and refrigerate for at least 2 hours or until set

  4. For the coulis, halve the passion fruits, scoop out the pulp, and strain or blend with 2 tablespoons agave or maple syrup if desired

  5. Serve the set panna cotta topped with passion fruit coulis
