Vegan Mango Vanilla Panna Cotta

Ingredients

  • 200g fresh mango
  • 2 tbsp agave or maple syrup
  • 1 tsp vanilla bean paste
  • 100g coconut cream
  • 200ml rice milk
  • 1 tbsp agave
  • 1/2 tsp agar powder
  • 2 passion fruits

Preparation

  1. Blend the fresh mango with 2 tablespoons of agave or maple syrup and 1 teaspoon of vanilla bean paste to make a puree.

  2. In a saucepan, combine 100g coconut cream, 200ml rice milk, 1 tablespoon agave, and 1/2 teaspoon agar powder. Heat gently, stirring until the agar dissolves.

  3. Stir the mango puree into the warm mixture.

  4. Pour the mixture into molds and refrigerate for several hours or until set.

  5. For the passion fruit coulis, cut the passion fruits in half and scoop out the pulp to use as a sauce.

  6. Serve the set panna cotta topped with the passion fruit coulis.
