Light Vegan Berry Mousse
Ingredients
- 240 ml aquafaba
- 140 g blackberries
- 40 g xylitol
Preparation
Puree blackberries finely.
Mix xylitol into the blackberries.
Mix aquafaba into the fruit mixture and whip in a stand mixer for at least 10 minutes.
Fill the mousse into glasses and let it rest in the fridge for 2-3 hours.
Decorate with blackberries and serve cold.

This light and fluffy dessert is absolutely vegan, gluten-free, and low-calorie.
Aquafaba is the thick liquid from canned beans or chickpeas that can be whipped into a vegan egg white foam substitute.
