Light Vegan Berry Mousse

Ingredients

  • 240 ml aquafaba
  • 140 g blackberries
  • 40 g xylitol

Preparation

  1. Puree blackberries finely.

  2. Mix xylitol into the blackberries.

  3. Mix aquafaba into the fruit mixture and whip in a stand mixer for at least 10 minutes.

  4. Fill the mousse into glasses and let it rest in the fridge for 2-3 hours.

  5. Decorate with blackberries and serve cold.

Tips

  1. This light and fluffy dessert is absolutely vegan, gluten-free, and low-calorie.

  2. Aquafaba is the thick liquid from canned beans or chickpeas that can be whipped into a vegan egg white foam substitute.
