Vegan Chocolate Mousse with Aquafaba
Ingredients
- 240 ml aquafaba (chickpea water)
- 120 g dark vegan chocolate (80%)
- 3 tbsp xylitol or erythritol
- 1 tsp cinnamon
Preparation
Drain the chickpeas from its water to obtain the aquafaba.
With an electric mixer, beat the aquafaba until whipped and stiff peaks form.
Add the sweetener of your choice.
Melt the chocolate in the microwave and whisk until all chunks have dissolved, then add the cinnamon.
Mix the chocolate into the aquafaba mixture and fill into small glasses.
Allow the mousse to set for 3 hours in the fridge.
Decorate with chocolate sprinkles and enjoy.
Tips
Beat the aquafaba for 7-10 minutes to ensure stiff peaks form and the mousse remains stable.
