Vegan Chocolate Mint Mousse
Ingredients
- 120g mint dark chocolate
- 300g organic silken tofu
- 2 tablespoons dairy-free milk
- 1-2 tablespoons cacao powder (to taste)
- 2-4 tablespoons maple syrup (to taste)
- Pinch of salt
- Drop of culinary grade peppermint extract (optional)
Garnishes
- coconut yoghurt
- pomegranate seeds
Preparation
Melt the mint dark chocolate.
In a blender, combine the silken tofu, dairy-free milk, cacao powder, maple syrup, salt, and peppermint extract.
Add the melted chocolate to the mixture and blend until smooth.
Pour into serving dishes and refrigerate for at least 2 hours to set.
Serve chilled with the garnishes.

This mousse serves 2-4 people and is light, airy, and indulgent.
