Easy Vegan Chocolate Mousse
Ingredients
- 120g dark chocolate (70% cacao)
- 1 cup aquafaba
- 2 tbsp brown unrefined sugar
- 2 tbsp coconut oil
- 1/2 cup coconut cream
Preparation
Melt the chocolate and coconut oil in a double boiler or a metal bowl set over a pan of simmering water, stirring frequently.
Allow the chocolate mixture to cool for 10 minutes.
Meanwhile, in a bowl, beat the aquafaba with the sugar using an electric mixer until stiff peaks form.
Gently whisk the cooled chocolate into the aquafaba mixture.
Whip the coconut cream until stiff; if desired, add 1 tablespoon of sugar.
Spoon the mixture into 4 small glasses and refrigerate for at least 4 hours to set.
Before serving, top with the whipped coconut cream.
