Easy Vegan Chocolate Mousse

Ingredients

  • 120g dark chocolate (70% cacao)
  • 1 cup aquafaba
  • 2 tbsp brown unrefined sugar
  • 2 tbsp coconut oil
  • 1/2 cup coconut cream

Preparation

  1. Melt the chocolate and coconut oil in a double boiler or a metal bowl set over a pan of simmering water, stirring frequently.

  2. Allow the chocolate mixture to cool for 10 minutes.

  3. Meanwhile, in a bowl, beat the aquafaba with the sugar using an electric mixer until stiff peaks form.

  4. Gently whisk the cooled chocolate into the aquafaba mixture.

  5. Whip the coconut cream until stiff; if desired, add 1 tablespoon of sugar.

  6. Spoon the mixture into 4 small glasses and refrigerate for at least 4 hours to set.

  7. Before serving, top with the whipped coconut cream.
