Peanut Butter Oat Chocolate Chip Cookies
Ingredients
- 3/4 cup oats
- 1 tsp cinnamon
- 1 tsp baking soda
- 3 tbsp chia seeds
- 1 cup peanut butter
- 1 egg
- 1 tsp vanilla extract
- 1/3 cup maple syrup
- 1/2 cup mini dark chocolate chips (preferably EnjoyLife brand)
Preparation
Preheat oven to 350.
In a medium bowl, mix 3/4 cup oats, 1 tsp cinnamon, 1 tsp baking soda, 3 tbsp chia seeds and set aside.
In another bowl, mix 1 cup peanut butter, 1 egg, 1 tsp vanilla extract, and 1/3 cup maple syrup with hand mixer until smooth.
Pour in the dry ingredients and mix with spatula.
Add in 1/2 cup mini dark chocolate chips.
Scoop the dough into small balls and gently flatten down with fork.
Bake for 10 minutes, and let them cool before you enjoy!
