Pumpkin & Banana Fruit Loaf

Ingredients

  • 1 1/4 cup oat flour
  • 1/2 cup buckwheat flour
  • 1/2 cup coconut sugar
  • 1 tsp bicarbonate
  • 1/2 tsp baking powder
  • 1 heaped teaspoon cinnamon
  • 1 tsp each of allspice, nutmeg and ginger
  • 1/4 cup pecans
  • 1/4 cup raisins and cranberries
  • 1/4 cup coconut flakes @crazyjackorganic
  • 1 small apple or pear, grated
  • pinch of sea salt
  • 1 tsp vanilla
  • 1 cup pumpkin banana purée (i used 1 small sweet potato roasted on 180* for 1 hour and blended with 2 small overripe bananas)
  • 1/4 cup olive oil
  • 30-60ml water as needed to moisten dough (i used 30ml)

Preparation

  1. Mix the flour, sugar, spices, salt, bicarbonate & baking powder in a large bowl

  2. Mix the wet in a separate bowl

  3. Make a well in the dry ingredients, mix thoroughly then fold in the nuts, coconut and fruit

  4. Pour into a lined smallish loaf tin

  5. Top with pumpkin seeds (of course) // flaxseed // other crunchy topping

  6. Bake in a preheated oven on 170 for around 45 minutes until a skewer comes out clean
