Raw Vegan Cinnamon Roll
Ingredients
- 12 medjool dates
- 1/2 cup raw cream cheese
- 1/4 teaspoon cinnamon
- 1/4 cup walnuts, finely chopped
- 1 tablespoon maple syrup
Raw cream cheese
- 1 cup raw cashews
- 1 tablespoon lemon juice
- 1/2 teaspoon Himalayan sea salt
Preparation
Soak 1 cup raw cashews in water for a few hours to soften them.
Blend the soaked cashews with 1 tablespoon lemon juice and 1/2 teaspoon Himalayan sea salt until smooth, adding water if needed to thin out.
Cut all of the dates in half lengthwise and remove the seeds.
Mix the cream cheese with 1/4 teaspoon cinnamon in a small bowl until combined.
Scoop about 1 teaspoon of the cream cheese mixture into each date half.
Arrange the dates on a serving platter.
Add chopped walnuts over the dates and lightly drizzle with maple syrup.
Cover and refrigerate until ready to serve.
