Raw Vegan Cinnamon Roll

Ingredients

  • 12 medjool dates
  • 1/2 cup raw cream cheese
  • 1/4 teaspoon cinnamon
  • 1/4 cup walnuts, finely chopped
  • 1 tablespoon maple syrup

Raw cream cheese

  • 1 cup raw cashews
  • 1 tablespoon lemon juice
  • 1/2 teaspoon Himalayan sea salt

Preparation

  1. Soak 1 cup raw cashews in water for a few hours to soften them.

  2. Blend the soaked cashews with 1 tablespoon lemon juice and 1/2 teaspoon Himalayan sea salt until smooth, adding water if needed to thin out.

  3. Cut all of the dates in half lengthwise and remove the seeds.

  4. Mix the cream cheese with 1/4 teaspoon cinnamon in a small bowl until combined.

  5. Scoop about 1 teaspoon of the cream cheese mixture into each date half.

  6. Arrange the dates on a serving platter.

  7. Add chopped walnuts over the dates and lightly drizzle with maple syrup.

  8. Cover and refrigerate until ready to serve.
