Rhum Soaked Fruit and Chocolate Refrigerator Cake
Ingredients
- 200g Rhum soaked dried fruit
- 160g dark chocolate
- 100g milk chocolate
- 150g Nice or digestive biscuits
- 150g light muscavado sugar
- 150ml honey
- 150g butter
- 1/2 tsp sea salt
- handful of hazelnuts
Preparation
Soak the fruit in some booze if using.
Melt the sugar, honey, butter, and finely chopped chocolate in a pan together.
Roughly crush the biscuits.
Add the fruit, biscuits and whole nuts to the melted chocolate mixture.
Pour into a lined baking tray of appropriate size and spread to the edges.
Chill in the fridge for 2 hours, then serve.
