Rhum Soaked Fruit and Chocolate Refrigerator Cake

Ingredients

  • 200g Rhum soaked dried fruit
  • 160g dark chocolate
  • 100g milk chocolate
  • 150g Nice or digestive biscuits
  • 150g light muscavado sugar
  • 150ml honey
  • 150g butter
  • 1/2 tsp sea salt
  • handful of hazelnuts

Preparation

  1. Soak the fruit in some booze if using.

  2. Melt the sugar, honey, butter, and finely chopped chocolate in a pan together.

  3. Roughly crush the biscuits.

  4. Add the fruit, biscuits and whole nuts to the melted chocolate mixture.

  5. Pour into a lined baking tray of appropriate size and spread to the edges.

  6. Chill in the fridge for 2 hours, then serve.
