Spiced Maple Glazed Apple and Whipped Feta Tart
Ingredients
- 1/2 cup pure maple syrup
- 3 tablespoons butter
- 1 teaspoon cinnamon
- 1/2 teaspoon salt
- 1/4 teaspoon ground ginger
- 1/4 teaspoon nutmeg
- 1/4 teaspoon black pepper
- 7 oz. feta
- 4 oz. or 6 tbsp. greek yogurt
- 2 tbsp olive oil
- 4 large apples (honey crisp, cored and thinly sliced)
- 1 sheet frozen puff pastry (thawed)
- turbinado sugar
- flaked salt
- black pepper
- 1 egg
Preparation
Preheat oven to 400F and line a baking sheet with parchment paper.
In a small saucepan over medium-high heat, bring maple syrup, butter, cinnamon, salt, ginger, nutmeg, and black pepper to a boil.
Simmer for 2 minutes and remove from heat to let slightly thicken.
In a food processor, combine feta, yogurt, olive oil, and 1 tablespoon of the maple glaze until smooth and creamy, about 4 minutes, scraping down as needed.
Roll out puff pastry into a rectangle on a lightly floured surface and move it to the parchment paper-lined sheet pan.
Prick the middle of the pastry with a fork, leaving a 1/2-1 inch border around the edges.
Spread the feta mixture evenly over the puff pastry and drizzle with 1 more tablespoon of the maple sauce.
Layer the sliced apples with the skin facing upwards and brush the maple glaze over the apples.
Brush the puff pastry edges with egg wash and then with the maple glaze.
Sprinkle the tart with turbinado sugar and black pepper.
Bake for 25-35 minutes until golden brown. (Note: edges may get darker due to maple glaze)
Remove from oven and let cool slightly, then sprinkle lightly with flaky salt.
Serve warm with ice cream.
