Spooky Halloween Monster Layer Cake
Ingredients
Cake batter
- 175 g sugar
- 4 medium eggs
- 1 packet vanilla sugar
- 1 tsp orange zest
- 120 ml vegetable oil
- 120 ml orange soda
- 250 g all-purpose flour
- 50 g cornstarch
- 3 tsp baking powder
Filling
- 1 can peaches
- 140 g mascarpone cheese
- 100 g quark (20% fat)
- 40 g sugar
- 120 g heavy cream
- 1 pinch vanilla extract
Buttercream
- 250 ml milk
- 1 packet vanilla pudding powder
- 50 g sugar
- 1 egg yolk
- 1 pinch vanilla extract
- 250 g softened butter
- Orange food coloring (a few drops)
Decoration
- 8 lollipops
- 8 sugar decoration eyes
- 100 g white fondant
- 2 tbsp water
- 100 g black fondant
Preparation
Line a 20 cm springform pan with parchment paper and preheat the oven to 160°C (convection: 140°C)
Beat sugar, eggs, vanilla sugar, and orange zest with a mixer until foamy. Add oil and orange soda
Sift flour, cornstarch, and baking powder, then gradually add to the batter and mix until smooth
Pour batter into the pan and bake for 35-40 minutes. Let the cake cool and remove from the pan
Drain peaches well and cut in a fan shape. Cut the cooled cake horizontally into 3 layers. Set aside the prettiest layer and prepare the other two layers side by side
Whip mascarpone, quark, sugar, heavy cream, and a little vanilla extract until stiff
Spread half the filling on the two layers, then top with peaches
Divide the remaining cream between the layers and smooth. Stack the layers, place the third layer on top, and chill the cake for 1 hour
Buttercream
In a saucepan, combine milk, vanilla pudding powder, sugar, and egg yolk. Cook over medium heat, stirring constantly, until thickened. Let cool completely
Beat in softened butter and vanilla extract until smooth. Tint orange with food coloring
Decoration
Cover the chilled cake with the buttercream
Roll out white fondant with 2 tablespoons water and cover the cake
Use black fondant to create facial features and attach sugar eyes and lollipops to form a monster face
