The Gooey-Est Chocolate Chip Peanut Butter Brookies

Ingredients

  • 1/4 cup almond milk
  • 2 tbsp olive or coconut oil
  • 1/2 cup organic clean creamy peanut butter (i trust @spreadthelove)
  • 2 tbsp flax meal
  • 1/3 cup coconut sugar
  • 1 cup almond flour
  • 1/2 tsp baking powder
  • 1/4 cup vegan chocolate chips (i used @santabarbarachocolate )
  • pink sea salt
  • optional superfoods:
  • 1/2 tbsp lucuma
  • 1 scoop lion’s mane

Preparation

  1. In a large bowl, add flax meal and almond milk and stir well

  2. Let sit 3-5 minutes

  3. Add peanut butter and olive oil and stir until creamy

  4. Mix in almond flour, coconut sugar, optional superfoods, baking powder

  5. Finally, fold in chocolate chips

  6. Lightly coat an 8x8 or bread pan with coconut oil

  7. Pour batter, sprinkle sea salt

  8. Bake at 350 degrees for 20 minutes

  9. Enjoy
