These Frozen Cheesecake Bites

Ingredients

  • - 1/2 cup (120g) dairy-free ricotta (or regular ricotta drained of all moisture)⁠
  • - 1/4 cup (28 g) almond flour⁠
  • - 2 tbsp (42 g) maple syrup⁠
  • - 1 tbsp(15 g) coconut oil melted⁠
  • - 1 tbsp juice of lemon⁠
  • - 1 tsp vanilla⁠
  • - 2 tbsp (30 g) any flavour jam⁠

Preparation

  1. Mix all ingredients together except the jam, stir until well blended

  2. Add the jam and fold a couple of times to create a swirl

  3. Scoop onto parchment, mould into balls and freeze until solid

  4. Keep the bites frozen! ❄️⁠
