Vegan Bourbon Biscuit Brownies
Ingredients
- 200g dark chocolate
- 140g plain flour (or you can substitute this for self raising flour for a more cakey brownie)
- 200g caster sugar
- 20g cocoa powder
- 1 tsp baking powder
- 80ml vegetable oil
- 1 tsp vanilla extract
- 240ml soya milk
- 1/2 pack of Bourbon biscuits
Preparation
Preheat oven to 180°C Fan and create a bain-marie by filling a small saucepan halfway with boiling water, placing it over low heat, then setting a clean heat-proof bowl on top ensuring the bottom does not touch the water, break up the chocolate into the bowl, and let it melt slowly.
While the chocolate is melting, sift together the flour, sugar, baking powder, and cocoa into a large mixing bowl and whisk to combine.
Add the oil, milk, and vanilla to the dry mixture and whisk until just combined.
Pour in the melted chocolate and mix again until just combined, ensuring no dry mix remains around the sides or bottom of the bowl, then pour into a lined tin.
Break up Bourbon biscuits (check for accidental vegan status) and place them randomly on top.
Bake for 25-30 minutes or until a toothpick comes out clean.
Let the brownie cool before cutting, then serve and remember to take a picture for sharing.
