Vegan & Gluten-Free Avocado Chocolate Pudding

Ingredients

  • 1 ripe avocado
  • 2tbps maple syrup
  • 1tsp vanilla extract
  • 1/4 cup plant milk
  • 1/4 cup @xocousa chocolate (roughly chopped)
  • 2tbsp cacao powder
  • 1/4tsp sea salt

Preparation

  1. Using the double boiling method, melt your chocolate

  2. In a blender or food processor, add all of your ingredients including melted chocolate

  3. Blend until smooth and thick

  4. Pour mixture into airtight container and let chill for an hour before serving

  5. Garnish with fresh mint or berries and enjoy

  6. Keeps in an airtight container stored in fridge for 2-3 days
