Vegan High Protein Tiramisu
Ingredients
- 1/2 pack of silken tofu
- 1/3 cup of coconut cream from a tin
- 1 tsp vanilla extract
- 1/2 tbsp liquid sweetener of choice (such as syrup from @myproteinuk or maple syrup)
- Coffee granules
- Digestive biscuits (or another similar vegan biscuit)
Preparation
Prepare the creamy mixture by blending the coconut cream, tofu, vanilla extract, and sweetener in a blender until smooth.
Taste and adjust the sweetness if necessary.
In a bowl or small flat dish, prepare coffee using the coffee granules and hot water.
Begin assembling the layers in ramekins: briefly soak a biscuit in the coffee (avoid oversoaking to prevent crumbling).
Place the soaked biscuit at the bottom of the ramekin, followed by a layer of the creamy mixture, a sprinkle of coffee granules or cacao powder, then repeat with another layer of biscuit, cream, and so on, until you reach the top.
Finish by sprinkling coffee or cacao powder on top and refrigerate for at least 2 hours to set.
