Vegan Mango Coconut Ladoo (Mango Bliss Balls)

Ingredients

  • Shredded Coconut - 1 cup
  • Coconut Milk Powder - 1 cup
  • Cardamom Powder - 1/2 tsp
  • Coconut Oil - 1 tbsp (Softened)
  • Mango Puree - 1/3 cup (Fresh or Canned)
  • Extra Shredded Coconut and 1 tsp Jaggery Powder (for rolling)

Preparation

  1. In a bowl, combine the shredded coconut, coconut milk powder, cardamom powder, softened coconut oil, and mango puree.

  2. Mix well until the ingredients come together to form a doughy consistency.

  3. Roll the mixture into round shapes using your hands.

  4. In a separate bowl, mix extra shredded coconut and jaggery powder.

  5. Roll the prepared round mango-coconut balls in the coconut-jaggery mixture, coating them evenly.

  6. Place the ladoos in an airtight container and refrigerate. They can be stored for up to 2 weeks.
