Vegan Mango Coconut Ladoo (Mango Bliss Balls)
Ingredients
- Shredded Coconut - 1 cup
- Coconut Milk Powder - 1 cup
- Cardamom Powder - 1/2 tsp
- Coconut Oil - 1 tbsp (Softened)
- Mango Puree - 1/3 cup (Fresh or Canned)
- Extra Shredded Coconut and 1 tsp Jaggery Powder (for rolling)
Preparation
In a bowl, combine the shredded coconut, coconut milk powder, cardamom powder, softened coconut oil, and mango puree.
Mix well until the ingredients come together to form a doughy consistency.
Roll the mixture into round shapes using your hands.
In a separate bowl, mix extra shredded coconut and jaggery powder.
Roll the prepared round mango-coconut balls in the coconut-jaggery mixture, coating them evenly.
Place the ladoos in an airtight container and refrigerate. They can be stored for up to 2 weeks.
