Vegan Mars and Milky Way Bars
Ingredients
Chocolate cream layer
- 180g dates
- 90g oat flour
- 90g almond butter
- 1 scoop chocolate protein powder
- 1 tsp cocoa powder
Caramel
- 200g dates
- pinch of coarse sea salt
- 1/2 tsp vanilla extract
Chocolate cover
- 90g 70% cocoa chocolate
Preparation
For the date caramel soak the dates in hot water for about 30 minutes (Do that simultaneously with beginning of part 2.) Then drain and add to a food processor along with vanilla extract and sea salt. Blend and add as many tablespoons of water as needed to make a smooth paste, depending on your food processor. Fill it in a sealable container and store it in the fridge (you might not need all of this for this recipe so you can use it as a sweetener in other recipes as well).
For the chocolate layer also soak the dates in hot water in a separate container for about 30 minutes. Drain the water and add to the blender first with the almond butter until smooth (eventually add a bit of water to mix). Then add all dry ingredients and blend again.
Layer a small rectangular form with parchment paper (mine is 15 x 20 cm). Then fill in the chocolate cream layer and spread evenly using a spatula. Place in the fridge for about an hour until it hardens a bit.
Take it out of the fridge and add the caramel layer. Melt the chocolate over a waterbath and add on top once it is melted.
For optimal result place the bars in the freezer for about 2 hours then serve. You can also place it back into the freezer. When it freezes overnight it will be like a Mars ice cream :) If you leave it in the fridge it will still be sliceable but more creamy in the texture. Either way it tastes extremely delicious ☺️
