Homemade Vegan Twister Ice Lollies

Ingredients

  • 1 Tinned Pears
  • 1 Tinned Strawberry
  • 1 Tinned Pineapple
  • 2 Small Limes
  • Vegan Vanilla Icecream
  • 75g Caster Sugar
  • Green food dye

Preparation

  1. Drain strawberries and pears, keeping back some of the juice of each.

  2. For lime mix, blend pears with 2 tbsp juice, 50g sugar, lime juice, and green food dye until desired color is reached. Approximately half a cap full of dye was used.

  3. For strawberry mix, blend strawberries with 2 tbsp juice and 25g sugar.

  4. Open tinned pineapple, remove 1-2 segments, and blend until smooth.

  5. Fill the center of an IKEA water bottle ice cube tray halfway with strawberry mix and freeze until solid.

  6. Pour the lime mixture halfway into the moulds, insert wooden sticks, and freeze.

  7. Once frozen, cut the strawberry centers and place them in the mould, then fill the remainder with lime mixture and freeze.

  8. Take 100g ice cream and stir in 3-4 tbsp pineapple mixture.

  9. Place the ice cream mix into a piping bag and freeze for 10-15 minutes.

  10. Remove from freezer, run under warm water for 5 seconds, and gently pipe the ice cream mixture around the twister lollies. Note: Hands may freeze; wrap the bag with kitchen roll to help.

  11. Remember to rotate the mixtures. This recipe should make 8 original and 4 strawberry twisters.
