Vegan Gluten-Free Queso Dip

Ingredients

  • 1/2 cup sushi rice
  • 1 1/2 cups yellow vegetable stock
  • 1/2 carrot, diced
  • 2 Tbsp mellow miso
  • 2 Tbsp nutritional yeast
  • 1/2 tsp onion powder
  • 1/4 tsp garlic powder
  • 1/2 tsp apple cider vinegar
  • 1/2 tsp salt
  • 2 Tbsp cornstarch
  • 1 1/2 cups water

Optional add-ins

  • red onion
  • tomato
  • jalapeno
  • cilantro

Preparation

  1. Bring the rice, vegetable stock, and carrot to a boil, then reduce heat to medium-low and cook for 15 minutes.

  2. Add the remaining ingredients and blend until smooth.

  3. Heat the mixture while whisking.

Notes

  1. The dip will look thin at first but thickens as it cools.

  2. Blend again before serving to ensure it is smooth.
