Fennel Kale Salad
Ingredients
- 1 bunch kale
- 1/4 cup pecan ( toast pecan for 7 minutes in oven)
- 1 pinch of salt
- 2 cups fennel sliced thin
- 1 green apple
- 1/2 cup dried cranberries
- 1/2 cup crumbled goat cheese
- 1/4 cup maple syrup
- 2 tbsp fresh lemon juice
- 1 tbsp dijon mustard
- 1 tbsp chopped shallot
- 2 tsp chopped fresh thyme
- 6 tbsp olive oil
Preparation
Combine all ingredients together, toss with dressing & enjoy
