Delicious Kale and Fennel Salad with Maple Dressing
Ingredients
- 1 bunch kale
- 1/4 cup toasted pecans
- 1 pinch of salt
- 2 cups thinly sliced fennel
- 1 green apple
- 1/2 cup dried cranberries
- 1/2 cup crumbled goat cheese
Dressing
- 1/4 cup maple syrup
- 2 tbsp fresh lemon juice
- 1 tbsp Dijon mustard
- 1 tbsp chopped shallot
- 2 tsp chopped fresh thyme
- 6 tbsp olive oil
Preparation
Toast the pecans in the oven for 7 minutes and let them cool.
Prepare the dressing by mixing together all dressing ingredients.
Combine all salad ingredients in a large bowl.
Toss the salad with the dressing and serve immediately.
