Delicious Kale and Fennel Salad with Maple Dressing

Ingredients

  • 1 bunch kale
  • 1/4 cup toasted pecans
  • 1 pinch of salt
  • 2 cups thinly sliced fennel
  • 1 green apple
  • 1/2 cup dried cranberries
  • 1/2 cup crumbled goat cheese

Dressing

  • 1/4 cup maple syrup
  • 2 tbsp fresh lemon juice
  • 1 tbsp Dijon mustard
  • 1 tbsp chopped shallot
  • 2 tsp chopped fresh thyme
  • 6 tbsp olive oil

Preparation

  1. Toast the pecans in the oven for 7 minutes and let them cool.

  2. Prepare the dressing by mixing together all dressing ingredients.

  3. Combine all salad ingredients in a large bowl.

  4. Toss the salad with the dressing and serve immediately.
