Herby Rainbow Slaw with Sesame Tofu
Ingredients
Salad
- 1 red capsicum
- 1 yellow capsicum
- 3 kale leaves
- 1/4 purple cabbage
- 1 large carrot
- Large handful of coriander
- Large handful of mint
- Large handful of basil
Tofu
- 300g firm tofu
- 3 tbsp tapioca or corn flour
- 1 tbsp sesame oil
Dressing
- 1 tbsp soy sauce or tamari
- 1 tbsp maple syrup
- 1 tbsp apple cider vinegar
- 1 tbsp vegan aioli
- 1 tsp ginger
- 2 garlic cloves
Preparation
In a large bowl add all of the salad ingredients and mix well.
Coat the tofu in the tapioca or corn flour and place in a large pan over medium heat with the sesame oil. Cook for 2-3 minutes on each side until golden. Remove from heat and set aside.
To make the dressing add all of the ingredients to a bowl and mix well. Massage the dressing through the salad. Serve with the tofu and extra herbs.
