Easy Apple Slaw with Creamy Dressing

Ingredients

  • 1 cup red cabbage, shredded
  • 1 cup white cabbage, shredded
  • 1 cup apple, grated (Gala or Granny Smith)
  • 1 cup carrot, grated
  • 1/4 cup flat leaf parsley, finely chopped
  • 1/4 cup pumpkin seeds

Dressing

  • 1/3 cup coconut yogurt
  • 1 tablespoon apple cider vinegar
  • 1 tablespoon Dijon mustard
  • 2 teaspoons maple syrup
  • pinch sea salt

Preparation

  1. Shred the red and white cabbage

  2. Grate the apple and carrot

  3. Finely chop the flat leaf parsley

  4. In a bowl, mix the coconut yogurt, apple cider vinegar, Dijon mustard, maple syrup, and a pinch of sea salt to make the dressing

  5. Toast the pumpkin seeds in a dry skillet over medium heat until fragrant and lightly browned

  6. Combine the shredded cabbage, grated apple, carrot, and chopped parsley in a large bowl

  7. Pour the dressing over the slaw mixture and toss until evenly coated

  8. Sprinkle the toasted pumpkin seeds on top before serving
