Easy Apple Slaw with Creamy Dressing
Ingredients
- 1 cup red cabbage, shredded
- 1 cup white cabbage, shredded
- 1 cup apple, grated (Gala or Granny Smith)
- 1 cup carrot, grated
- 1/4 cup flat leaf parsley, finely chopped
- 1/4 cup pumpkin seeds
Dressing
- 1/3 cup coconut yogurt
- 1 tablespoon apple cider vinegar
- 1 tablespoon Dijon mustard
- 2 teaspoons maple syrup
- pinch sea salt
Preparation
Shred the red and white cabbage
Grate the apple and carrot
Finely chop the flat leaf parsley
In a bowl, mix the coconut yogurt, apple cider vinegar, Dijon mustard, maple syrup, and a pinch of sea salt to make the dressing
Toast the pumpkin seeds in a dry skillet over medium heat until fragrant and lightly browned
Combine the shredded cabbage, grated apple, carrot, and chopped parsley in a large bowl
Pour the dressing over the slaw mixture and toss until evenly coated
Sprinkle the toasted pumpkin seeds on top before serving
