Easy Vegan Apple Slaw

Ingredients

  • 1 cup red cabbage, shredded
  • 1 cup white cabbage, shredded
  • 1 cup apple, grated (I like Gala or Granny Smith)
  • 1 cup carrot, grated
  • 1/4 cup flat leaf parsley, finely chopped

Dressing

  • 1/3 cup coconut yogurt
  • 1 tbsp apple cider vinegar
  • 1 tbsp Dijon mustard
  • 2 tsp maple syrup
  • pinch sea salt
  • 1/4 cup pumpkin seeds

Preparation

  1. Shred the red cabbage, white cabbage, apple, and carrot as specified.

  2. Finely chop the parsley.

  3. In a small bowl, mix the coconut yogurt, apple cider vinegar, Dijon mustard, maple syrup, and a pinch of sea salt to prepare the dressing.

  4. Combine the shredded vegetables, apple, and chopped parsley in a large bowl.

  5. Pour the dressing over the mixture and toss until well coated.

  6. Sprinkle with pumpkin seeds and serve.
