Vegan Fall Salad with Maple Balsamic Dressing

Ingredients

  • 2 cups of arugula
  • 1 cup of chopped kale
  • 2 cups of roasted butternut squash
  • 2 tbsp of vegetable oil
  • 1 cup of packet of cooked Organic Quinoa or Brown Rice.
  • 1/2 cup candied walnuts
  • 1/3 cup pomegranate seeds
  • 1/3 cup cranberries
  • 2 apples sliced

Dressing

  • 1/3 cup extra virgin olive oil
  • 1/3 cup balsamic vinegar
  • 1 tbsp of maple syrup
  • 1 tbsp of Dijon mustard
  • 1 garlic minced
  • 1 tsp of black pepper
  • 1 tsp salt

Preparation

  1. Mix 2 cups of cubed butternut squash with 2 tbsp of vegetable oil, 2 tsp of Cajun spices or just salt and pepper and roast at 400 F in the oven for 20 min until it’s nice and golden brown.

  2. Meanwhile mix all the dressing ingredients in a jar and shake well to combine.

  3. Arrange the salad with all the ingredients.

  4. Drizzle with the balsamic maple dressing and enjoy.
