Vegan Fall Salad with Maple Balsamic Dressing
Ingredients
- 2 cups of arugula
- 1 cup of chopped kale
- 2 cups of roasted butternut squash
- 2 tbsp of vegetable oil
- 1 cup of packet of cooked Organic Quinoa or Brown Rice.
- 1/2 cup candied walnuts
- 1/3 cup pomegranate seeds
- 1/3 cup cranberries
- 2 apples sliced
Dressing
- 1/3 cup extra virgin olive oil
- 1/3 cup balsamic vinegar
- 1 tbsp of maple syrup
- 1 tbsp of Dijon mustard
- 1 garlic minced
- 1 tsp of black pepper
- 1 tsp salt
Preparation
Mix 2 cups of cubed butternut squash with 2 tbsp of vegetable oil, 2 tsp of Cajun spices or just salt and pepper and roast at 400 F in the oven for 20 min until it’s nice and golden brown.
Meanwhile mix all the dressing ingredients in a jar and shake well to combine.
Arrange the salad with all the ingredients.
Drizzle with the balsamic maple dressing and enjoy.
Tips
This salad is perfect for meal prepping.
It can be made quickly if all ingredients are ready.
