Vegan Beetroot and Apple Salad
Ingredients
- Precooked beetroots
- 1 peeled and diced apple
- Vegan creme fraiche and vegan soy yoghurt
- Salt and pepper
- 2 teaspoons dijon mustard
- Optional: some lemon juice and 1 red onion
Preparation
Prepare the apple by peeling and dicing it.
If using red onion, peel and chop it.
In a bowl, mix the vegan creme fraiche, vegan soy yoghurt, dijon mustard, salt, pepper, and lemon juice to create the dressing.
Combine the precooked beetroots, diced apple, and optional red onion in a large bowl.
Pour the dressing over the salad mixture and stir well to coat evenly.
Serve the salad chilled or at room temperature.
Notes
This salad is a great way to use Christmas leftovers and can be adjusted to taste.
