Vegan Beetroot and Apple Salad

Ingredients

  • Precooked beetroots
  • 1 peeled and diced apple
  • Vegan creme fraiche and vegan soy yoghurt
  • Salt and pepper
  • 2 teaspoons dijon mustard
  • Optional: some lemon juice and 1 red onion

Preparation

  1. Prepare the apple by peeling and dicing it.

  2. If using red onion, peel and chop it.

  3. In a bowl, mix the vegan creme fraiche, vegan soy yoghurt, dijon mustard, salt, pepper, and lemon juice to create the dressing.

  4. Combine the precooked beetroots, diced apple, and optional red onion in a large bowl.

  5. Pour the dressing over the salad mixture and stir well to coat evenly.

  6. Serve the salad chilled or at room temperature.

Notes

  1. This salad is a great way to use Christmas leftovers and can be adjusted to taste.
