Vegan Green Goddess Salad

Ingredients

Green goddess sauce

  • 1 cup basil
  • 1/2 cup cilantro
  • 1-3 fresh mint leaves
  • 1/3rd cup hemp seeds
  • 1/4th cup nutritional yeast
  • 1/2 of a lemon juiced
  • 1/4 avocado oil (sub any)
  • 2-3 garlic cloves
  • 1 shallot
  • 2-3 slices jalapeño
  • Tizzy salt
  • 1/4th - 2/3rds cup water

Salad

  • 1/2 head of cabbage
  • 4 baby cucumbers
  • 1 bunch chives
  • 1/2 bunch green onion
  • 1/2 lemon
  • Salt and pepper

Preparation

  1. Start by creating your sauce; blend all ingredients and set aside. If the sauce isn’t as thin as you like, add more water!

  2. Next thinly slice your cabbage, cucumbers, green onion and chives and add to a bowl

  3. Give everything a good mix then add in sauce, salt, pepper and extra lemon juice!

Notes

  1. Hemp seeds are safe for those who are allergic to nuts and are packed with plant-based protein.

  2. Nutritional yeast has a ton of protein, provides a cheesy flavor without dairy, and is a natural source of B12.
