Rice Noodle and Cucumber Salad

Ingredients

  • 200g rice noodles
  • 1 medium cucumber
  • Handful mint leaves

Sauce

  • 1 tsp lime zest
  • 1 tsp ginger, grated
  • 1/4 cup roasted peanuts, roughly pound
  • 1 tbsp coconut oil
  • 2 tbsp soy sauce
  • 1/2 tbsp sesame oil
  • Juice from 1/2 lime
  • 1 tbsp brown sugar
  • 2 tbsp peanut butter
  • 1 tsp chilli flakes

Preparation

  1. Soak the rice noodles in water until soft.

  2. Thinly slice the cucumber.

  3. Chop the mint leaves.

  4. Add brown sugar, soy sauce, chilli flakes, ginger, lime zest, sesame oil, peanut butter, coconut oil, and lime juice to a jar and mix well until all combined, then set aside.

  5. Place the soaked rice noodles, cucumber, and mint leaves into a large bowl.

  6. Pour the sauce mixture over the rice noodles.

  7. Carefully mix until the noodles are well coated with the sauce.

  8. Sprinkle with peanuts and chilli flakes.
